Chef’s Special dish

Our Spicy chef 'Ket' will be doing a taster session at some of the well known ‘Fresh & Wild’ stores in London on the following dates:

Spice of the month

This month our focus is on the aromatic spice of Cumin or what is also known as ‘Jeera’. We use a lot of cumin in our popular recipes of ‘Jeera Chicken’ and ‘Coriander Chicken’ to create a delicious flavour.

Here are some facts:

They are brownish in colour, boat-shaped with tiny stalks. (You've probably seen them in our 'Sachet 1' bags!).

They can be used whole or ground to create an aromatic pungent flavour.

Cumin is used in Indian, Eastern, Mexican, Portugese and Spanish cookery.

It is an ingredient of most curry powders and many savoury spice mixtures.

And finally did you know that cumin can be a diuretic, a carminative, a stimulant and an astringent - an all in one?

 

Our Secret tips…

We wanted to share some of our tips with you...

We know that you love our authentic recipes and enjoy cooking them for your friends and family but now you can enjoy them a lot more by simply adding a few accompaniments to your dish.

Here's some we came up with. Enjoy!

Yoghurt Raita

This is a south asian condiment which can be used as a sauce or a dip to accompany your curry. Traditionally it has a cooling effect on the palate which makes it ideal for hot spicy dishes.

Shopping List:

5 tbs natural yoghurt

1/3rd cucumber

Fresh coriander/mint for garnish

Pinch of salt

˝ tsp of cayenne pepper (optional)

What to do:

1) Pour the yoghurt into a medium sized bowl.

1) Dice the cucumber into small pieces.

2) Add to the yoghurt.

3) Add the salt and chilli powder if required.

4) Mix ingredients together and garnish with fresh coriander/mint.

TIP: Enjoy as a side dish to your main curry or add to your curry for a creamy texture.

 

Onion and Mint Sauce Salad

This is a special salad that creates a tangy, refreshing and crunchy flavour when accompanying the Spice-N-Tice recipes of 'Coriander Chicken', ''Methi Chicken' and 'Lamb Madras'.

Shopping List:

1 medium onion

11/2 tsp of mint sauce

1tbsp lemon juice

Sprinkle of fresh coriander for garnish

What to do:

1) Peel and thinly slice the onion and put into a bowl.

2) Add the mint sauce and lemon juice to the onions and mix.

3) Sprinkle the coriander leaves over the top and serve with your curry.
