Heat oil/low cal spray in a pan over a medium heat add onions and cook until soft.
Add garlic and continue to fry.
Next add carrots or pumpkin, vegetable stock and Spicentice Carrot & Coriander Soup spices. Bring to the boil and allow to simmer for 10-15 mins or until carrots or pumpkin is tender. Stir in chopped coriander.
Whizz the soup with a hand blender or food processor, for a smooth consistency.
Finally season to taste, add a dollop of cream (optional) and fresh coriander.
Serve with a grilled cheese sandwich or hot baguette.
