Low Calorie Chipotle Chicken Pasta Recipe

This spicy pasta dish is healthy and hearty, offering a delicious kick thanks to our chipotle rub. It's a simple dish you can prepare for dinner, with leftovers making a fantastic low-calorie lunch to take to work with you the next day.


Shopping list

  • 80g of pasta per person
  • 2 diced chicken breasts
  • 1 large red onion
  • 2 peppers (colour of your choice)
  • 350ml of passata
  • 2 cloves of garlic
  • 1.5 tbsp of chipotle (add more or less, depending on how hot you want it)
  • 2 tbsp of tomato puree
  • 250ml of vegetable stock
  • 4 tbsp of Worcester sauce
  • 1.5 tbsp of balsamic vinegar
  • Spicentice Chipotle Rub

Cooking

  1. Fry the vegetables on a medium heat until they're softened, and then add the garlic and chicken. Continue to cook on a medium heat until the chicken is almost cooked through
  2. Add the passata, stock and puree and bring to the boil
  3. Mix in the Spicentice Chipotle Rub, balsamic vinegar and Worcester sauce, and leave the dish to thicken for around 25 minutes, stirring occasionally
  4. Add some boiled pasta and mix well. Serve on a plate and garnish with coriander
