Chimichanga or Chimi is a Mexican-American fusion of a large burrito that was prepared with a choice of meat, spices and vegetables. It is often deep fried and served with lettuce with mild sauce and cheese. This Chicken Chimichanga recipe lets you create a large flour tortilla that is filled with all the goodness of shredded chicken, cheese, refried beans, salsa and best spices from us! It’s rolled up like a burrito, and the best part is that – it can be baked or pan-fried.

Chicken Chimichanga

Shopping List

2 cups of shredded chicken

1 can of refried beans

½ cup of salsa

1 tsp of cumin

½ tsp of dried oregano leaves

2 chopped green onions

Tsp of chilli powder

3 tbsp of vegetable oil

6 flour tortillas

For the toppings

Sour cream, salsa and guacamole. (This can be optional)

Cooking

  1. Mix the Tikka Sizzler spice mix with the chicken, and set aside.
  1. Cook the chicken breasts in a frying pan until it’s no longer pink and all tender. Allow it to rest before you start shredding or chopping it.
  1. Add the chicken, refried beans, salsa, cheese, green onions and spices all together inside a mixing bowl. Start mixing it.
  1. Get a cup of the mixture and put it the centre of each tortilla.
  1. Fold the opposite sides of the tortilla and roil it.
  1. If you are planning to bake it, then you have to preheat the oven to about 400 degrees F. Brush it lightly with the oil and bake it for 25 minutes until it starts to become crispy and golden.
  1. For the pan-fried chimichangas, you can heat the skillet to medium heat. Once it’s a good temperature, you can add the oil to the skillet and place the chimichangas.
