The Best Easy Jamaican Jerk Chicken Recipe
A delicious and simple version of your favourite Caribbean-style roasted chicken, this is flavourful, tender and perfect for you and your family. It’s mixed with pure herbs and spices, caramel-esque sweet sugar and black pepper, creating a powerful dish that is super-tasty.
Not only that, but jerk seasoning is fantastic when grilled, which makes for a much healthier dish - ideal if you're on a calorie-controlled diet.
Jamaican Jerk Chicken
- Chicken pieces - either 12 wings or 8 drumsticks or thigh fillets
- 1 small onion
- 5 spring onions
- 1 lime
- 2 garlic cloves
- 1 piece of ginger
- 1 tsp of salt
- 1 tsp of sugar or sweetener
- 2 tbsp of cooking oil or low cal spray
- Jerk Chicken Spices
Preparing the curry
Roughly chop the onion, spring onions, garlic and ginger. Place into a blender. Grate the rind of half the lime and squeeze all the juice of the lime into the blender. Add the Jerk Chicken Sachet with the salt, sugar and oil. Blend all the ingredients until the mixture turns into a paste Skin the chicken and score each piece several times. Place it in a bowl, add the paste and mix thoroughly until all the chicken is fully coated. Leave to marinade for 30 mins.
- Preheat the oven to gas mark 7 or 220ºC.
- Place the chicken on a foil-covered baking tray and cook for 35 mins, turning occasionally.
- Once cooked, season to taste and serve with salad and rice.
