Poussin is a small, immature chicken that is often called a spring chicken. It weighs about 400 to 500g, and is four to six weeks old. One bird is perfect for a single serving, and there is not much flesh on the bones. The meat is extremely soft and flavourful.

Poussin, a common favourite by many, is often stuffed with different seasonings to add flavours. The recipe below lets you prepare it in a simple yet most delicious way possible. Infused with rosemary, wine, and garlic stock, you can fully enjoy this fresh and crisp spring chicken.

3 tbsp olive oil

Spicentice Beer Can Chicken Rub

1 lemon

4 sprigs fresh rosemary

20 garlic cloves

5 tbsp white wine

5 tbsp chicken stock

Cooking

  1.    Preheat your oven to 230 C.
  1.    Rub the poussin with 1 tbsp of olive oil, season it lightly with Spicentice Beer Can Chicken Rub and place the lemon on each of the cavity of each bird. Arrange them in a large roasting tin.
  1.    Add the garlic cloves around the poussin. Roast it for 25 minutes.
  1.     Lower the oven temperature to 180 C.
  1.    Get a mixing bowl, add the chicken stock, wine and olive oil. Mix it well and pour over the poussins.
  1.    Roast it again for another 25 minutes until the poussins are all golden brown and the juices are all clear.
  1.    Make sure to baste it with the pan juice for every 10 minutes.
  1.    Transfer the poussins on a platter, and if there are some lemon left, you can squeeze it on top of the dish.
  1.    Tend the poussin with aluminium foil and transfer it to a medium saucepan.
  1.    Spoon the sauce and the garlic around it, add fresh rosemary on top and serve.
