A perfect alternative to green pesto, this red pesto pasta recipe lets you create a low calories dish with a fresh summer taste. Made with sun-dried tomatoes, roasted red peppers, parmesan, and basil, it’s full of flavour and gives a rich consistency to your pasta.
It’s quite interesting to trace back the history of pesto from its roots back to the Ancient Roman age. It comes from the word Genoesepestâ and generally means, to crush or to pound. It was traditionally prepared with a mortar and pestle, and has countless variations that use different ingredients like garlic, nuts, as well as cheese.
Thankfully, with the help of this recipe, you can now create your own homemade red pesto sauce and garnish it over pasta to enjoy a classic, authentic flavour.
Add the Spicentice Italian seasoning, sundried tomatoes, chilli, roasted red peppers, juice of half a lemon, cup of water, cup of olive oil, pepper, garlic, salt and the nutritional yeast into a blender. Whizz it together until it’s smooth. You may add more oil or water to achieve the consistency that you prefer.
Check the instructions on the packet of pasta. Boil water, cook the pasta and drain it carefully. Save about a third of a cup of the water used to boil the pasta to use later. Set aside once done.
